Easy Molecular Caviar

This is a great way to impress diners, and it is easier to do than you would expect! The only special ingredient you will need is Agar Agar which we get online but some supermarkets stock it.

Ingredients

2 cups VEGETABLE OIL (flavourless and one that remains liquid when chilled)

100ml pure low acidity FRUIT JUICE (here, I use mango, butterfly pea syrup and pomegranate).
In this Video we use Fruit flavour vinegar. Note: acidic juices such as lemon have some difficulty to set. You will need to adjust amount of agar agar you use.

1-1.5g AGAR AGAR POWDER
 

Instructions

Pour oil into a tall glass and chill in the fridge for 1 hour (the oil must be cold).
 

Stir the agar agar into the juice making sure it is dissolved completely.


In a very small saucepan bring the juice and agar agar to a boil whilst stirring. Then reduce to a gentle simmer and cook for 1-2 minutes, or until agar agar is dissolved.

Let it cool for around 3-5 minutes.

Fill an food syringe or squeezy bottle with the juice.

Drop, one drop at a time, into the cold oil. Move around a bit so you are not dropping one pearl immediately onto another. Little caviar orbs will form on contact with the cold oil and fall to the bottom of the glass.

Strain the caviar using a fine mesh strainer.

Rinse the caviar well with water in a bowl. Repeat rinsing a couple of times.

Store the caviar in a container until ready to use.
