Mango Cheesecake (Guilt Free Version)

Mango Cheesecake (Guilt free - so Low Fat, Low Calorie)

This is a lovely recipe for a Mango Cheesecake but has the added benefit (to some like us) as being LOW FAT. Now if you prefer, you can of course substitute the mango for a fruit of your choice. We think this tastes delish and was first shown on our facebook page

Low fat Mango Cheesecake Recipe

Ingredients

80g light digestive biscuits

50ml of Skimmed Milk

200g light soft cheese

500g quark

6 table spoons sweetener

2 ripe large Mangoes (1 to be made into a puree)

zest 1 lemon,

½ juice of a lemon

Agar-Agar

4 gelatine sheets

 

Method

Crush the digestive biscuits with a rolling pin or food processor. Add the skimmed milk until the consistency becomes soft and pliable.

Press mixture into the base of a 20cm springform tin. Chill in fridge to firm.

Peel mangoes and save about ½ a mango for decoration later.

Puree the rest with a bit of Mango juice but save ¼ of the puree also for decoration layer later**.

Whisk the light soft cheese with the quark and sweetener, then fold through the zest of 1 lemon.

Soak the gelatine sheets in a bowl of cold water.

Meanwhile add the juice of ½ a lemon to about 100ml of water and warm on the stove.

When the sheets feel soft, lower them into the juice/water mix on the stove and stir slowly until the sheets melt completely. Then remove from heat and allow to cool for a few minutes.

Once cool, add the gelatine mix into the cheese mixture and whisk until it is a medium stiff consistency.

Fold in the ¾ mango puree.

Spoon on top of the biscuit base and put in freezer for 20 minutes to chill until set.

Mix the Agar-Agar with 50ml of water and once stirred in, leave for 10 minutes.

**Add Agar Agar to the saved ¼ of Mango Puree at a rate of 1gram per 100ml of puree and once stirred in, leave to rest for 10 minutes. Then bring it to boil, once it does remove from heat and wait until it returns to luke warm or room temperature.

By now the cheesecake should be set. Once it has, gently pour the mango/agar agar mix on top, covering it evenly.

After only a few minutes it will start to set and now add mango pieces for decoration. Return to fridge until served.
