Watermelon Granita
Watermelon Granita is an ideal palate cleanser between courses for when you want to Wow! your guests. It also buys you a little time to prepare for the next course., or if you need that extra little cooking time. However, Pookie also turns it into a small dessert fit for any top class dining table with only a few changes.

This recipe of Watermelon Granita takes about 15 minutes to prep and about 5 minutes each time you "stir" the recipe. It does take about 3 hours to set though... so not a last minute choice!

INGREDIENTS

4 cups watermelon, seeded and cubed

1/2 cup sugar

1 cup champagne/prosecco( optional)

1tbsp lime juice

( slices watermelon to garnish)

Mint leaves to garnish
METHOD
Cut up watermelon into smaller chunks, removing the pips (unless your blender is a good one)
Place watermelon chunks and sugar in the pitcher of a blender and Blend for 1 minute.
Add the champagne and stir well.
Pour the watermelon mixture into a sealable freezer container, cover and place in the freezer.
Freeze mixture for 1 hour, remove from freezer and SLOWLY stir, breaking down and frozen parts.
Wait another hour and repeat above (remove from freezer and SLOWLY stir, breaking down and frozen parts.)
After about another hour or so the mixture should now be solid and it is ready to serve.
TO SERVE

Before serving, remove the frozen granita from the freezer and using a fork, scrape the top layer off creating small icicles.
Using a spoon, place into your serving dish.
Serve as palette cleanser in the small shot glass or serve as dessert in the cocktail glass garnish with watermelon and mint leaf.
